How To Make Superfood Breakfast Cookies

  1. Preheat the oven to 350°F. Use parchment paper to line a baking tray and set it aside. You can also replace parchment paper by greasing the baking sheet with oil. 
  2. Peel the bananas and mash them thoroughly. Make sure there are no chunks.
  3. Mix together the chia seeds, dried cranberries, pumpkin seeds, rolled oats, hemp seeds, and cinnamon in a medium-sized bowl.
  4. Pour out the wet mixture into the dry mixture and whisk vigorously to combine the two fully. 
  5. With a cookie scoop, scoop dough onto the parchment paper. You can also moisten your fingers and flatten the dough balls a bit. 
  6. Bake the cookies for about 15 minutes (or until they are golden brown). 
  7. Allow the cookies to cool down on the parchment paper. 
  8. The extras can be kept fresh in an airtight container for up to 1 week.

Ingredients
  

  • 2 ripe bananas
  • 1,5 cups rolled gluten-free oats
  • 1/4 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 2 tbsp hemp seeds
  • 1 tbsp chia seeds
  • 1/4 tsp cinnamon

Instructions
 

  • Preheat the oven to 350 degrees F or 175 C
  • Line a baking tray with parchment paper and set aside.
  • Peel the bananas, add them to a bowl and mash with a fork until smooth.
  • Add in all the remaining ingredients and mix well. Make sure there are no banana chunks.
  • Place a tablespoon of mixture on the baking tray.
  • Bake for 15 minutes.
